Grandpa’s Lo Mein
Ingredients:
3 Carrots
8 oz. Mushrooms
2 Celery Ribs
1 Broccoli Floret
2 Tbsp Olive Oil
1 Box Lo Mein Noodles
2 Cups Vegetable Stock
1 Tbsp Sesame Oil
Lo Mein Sauce
2 Tbsp Canola Oil
1 Tbsp Olive Oil
1 Tbsp Soy Sauce
1 Tbsp Hoisin Sauce
2 Tbsp Vegetable Stock
1 Tbsp Sesame Oil
Recipe:
-Boil a large pot of water.
-Cut up Vegetables and set aside (All thin sliced)
-To make the Lo Mein sauce. Add sauces and oils together in a small pot, and and set on low heat.
-Put a large pan or wok on high heat, add Olive Oil, then add vegetables and sauté until tender.
-Put Lo Mein noodles in pot of water and boil until al dente.
-Add Lo Mein sauce to vegetables and stir.
-Drain Lo Mein noodles, and immediately add to sautéed vegetables and stir.
-Add 2 cups vegetable stock and 1 Tbsp Sesame Oil.
-Stir until liquid is absorbed.
