Southwest Sweet Potato Hash
-4 cups Grated Sweet Potato
-1 can (10.5 oz) Black Beans
-4 cloves Minced Garlic
-1 Large diced Onion
-Southwestern Spice Mix (I used “Earth” from Convivial Spices)
-Salt/Pepper to taste
-2 TblSp Olive Oil
-Put Olive Oil in a large pot or frying pan on Medium High heat.
-Add garlic then very quickly add diced onion.
-Stir until the onions are translucent, add a liberal pinch of salt and pepper.
-Add the sweet potato and Southwest spice mix, stir for about 5 minutes.
-Add the black beans, gently stir for another 2 minutes
-Make sure to stir consistently, do not allow the sweet potato to burn.
-Prepare to sunny side up eggs.
-Garnish with avocado, salt and pepper to taste.
