QUARANTINE COOKBOOK: PHENOMENAL FRENCH ONION SOUP

PHENOMENAL FRENCH ONION SOUP

Ingredients:

1 stick butter (1/2 cup)

2 Tblsp olive oil

4 cups sliced onions

4 (10.5 ounce) cans beef broth

1 teaspoon dried thyme

Salt and Pepper to taste

2 slices French bread

1 cup shredded mozzarella

1/2 cup grated Parmesan cheese

Parsley (for garnish)

Recipe:

-Melt butter & olive oil in a large pot on medium heat. Add onions and stir continuously until translucent. Add a generous pinch of Salt & Pepper.

-Add beef broth and thyme. Season with salt and pepper, and simmer for 30 minutes.

-Heat the broiler in your oven.

-Ladle soup into oven-safe bowls and place one slice of bread on top of each. Sprinkle generously Parmesan cheese and Mozzarella cheese . Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and turns golden brown.
